Hiya friends! How are you lot all doing?

We had J's 3-twelvemonth-old bank check-upward yesterday and he is a healthy, growing boy. Null I didn't know, but e'er good to accept it confirmed by the professionals. 😉
I besides had my get-go PTA meeting last dark. I sometimes all the same experience like I'm simply masquerading as an adult — like I don't know what I'm doing and don't belong, while anybody else has their sh** together — merely I know we're all just doing our all-time and hobbling along. Right? Correct?! Please simply speak to me in soft tones and pat my head.
Anyway, can we talk squash? And specificallyspaghetti squash.
Information technology's a fruit. Did you already know that? How did I not?
I gauge since information technology's prepared as a vegetable- baked, roasted or steamed – I but thought it was.

It'due south because they have seeds on the within, which is 1 of the defining feature of a fruit.
Should have know, just even so, mind blown. 🤯
Anyway, I love me some spaghetti squash, whatever food group it might fall into. It'due south lite only rich and information technology makes a seriously fantastic low-calorie, low-carb, nutrient-dense alternative to pasta.
Plus information technology'south simply crazy to see that difficult squash yield those long, thin strands. A fun food for certain!
My spaghetti squash with pesto, peas and shrimp is a not bad light all-in-one meal. And I also love my 4-ingredient spaghetti squash with pesto chicken for an easy, healthy meal. And spaghetti squash with chicken and broccoli is something I tin make with ingredients I usually always have on hand.
(If you too love butternut squash like I do, cheque out this sausage stuffed butternut squash with spinach for a cozy meal.)
Today'south blimp spaghetti squash with sausage and kale is still healthy and fairly low-cal, just information technology's also a nod to the coming cold atmospheric condition and the need for all things comfort nutrient.
And it'due south only 6 ingredients (plus olive oil, table salt and pepper)! Can't beat that for keeping things uncomplicated at dinnertime!
It's hearty, bawdy, fill-you-up food that will make your belly full and happy without packing on the pounds. I don't demand any more of that kind of insulation 😉
